With “Olives” as the passion and inspiration, (his last name means “olive”) Zenola believes that olives are a foundational ingredient in all each of the five great cuisines of the Mediterranean, Italian, Greek, Lebanese , Moroccan, and Spanish-all of which pay homage to the olive in their offerings.
